If you're schedule is completely flexible, and you want to time your stay to when the weather in Orlando is perfect, I'd consider early October and the months of April and May at the top of the list. These months are on the ends of the rainly season, and the humidity levels are reasonable.
Most people come during the summer, and after you realize what the afternoon rains do to take out the humidity, you'll come to welcome them. The summer is just the time to visit many of the water rides and water parks thoughtout Orlando.
The winter months can be iffy. Sometimes they are the best, other times a cold spell can run through and ruin any plans you had to visit a water park.
